I thought I just wasn't a sweet tooth kind of person. The idea of dessert usually just doesn't appeal to me. Cheese? Yes. Sweets? Not so much.
Well, I've been living a lie. Apparently all you need in order for my sweet tooth to come out is the mention of fruit. As soon as I get the notion of cream topped berries in my head I become a woman obsessed.
This is how I discovered the six minute spongecake.
Last night I started thinking about all the berries in my fridge and needed a cake right that minute for dessert. After doing some research on the web I came across the idea of cooking the cake in the microwave. Genius! In six minutes you have a piping hot fresh cake in your hands. It cooks in a bowl, which causes the adorable dome shape. Wouldn't the entire thing look so charming topped with fruit and whipped cream?
Six Minute Spongecake
3/4 c self-rising flour
3/4 c sugar
10 T butter, softened (1 stick, 2 T)
3 eggs
1 t vanilla
In a microwave safe bowl (I used pyrex) cream together the sugar and butter. Add in the eggs one at a time and mix. Add vanilla. Mix in the flour a little at a time.
Place uncovered in the microwave. Heat for six minutes on high. Using hotpads, pull your cake out of the microwave and test with a toothpick. If any cake comes off onto the toothpick, heat for an additional minute.
