Last night I suddenly had the urge to change up my food routine. Spring is here in full force and I am finding myself dreaming of asparagus quiche and tomato tarts. Suddenly, all I want are savory pies and little bits of edibles instead of large plated meals.
I think this spring I am going to pare down some of my cooking to a dozen or so simple meals that can be made in advance and nibbled on whenever we feel like eating. How about some of my ideas?
Quick quiches I can make and freeze- asparagus & broccoli, leek & nutmeg
Cold Roasted vegetable salad tossed in vinaigrette.
lemon linguini
chicken couscous salad
classic pasta salad- you know, the kind with the spiral pasta
Jicama slaw
Notice a trend here? Different salads I can prepare and then keep in the fridge. I am thinking a trip to the grocery store is in order.
