Have I mentioned before that I am not a huge fan of the typical breakfast in the morning? Most of the time I eat leftovers from the night before; rice and beans, pasta, etc. I like to eat around 9:30 or 10 am. But on those mornings when we don't have any leftovers I like to find quick fixes for my hunger. This spinach salad is such a tasty solution, but really it's good any old time.
Also, a tip...I keep bacon in the freezer so it won't get used constantly, but I can cut off pieces as necessary. I just use a sharp knife to slice off and inch or so and return the rest to the freezer.
4 cups fresh spinach
1/2 avocado cubed
1 cup peas
1/4 cup greek yogurt
1 T mayonaisse
juice of 1 small lemon
1/2 t dried mint
1/4 t dried tarragon
1 t fresh chopped dill
salt and pepper to taste
In a bowl, combine mayo, yogurt, herbs, and lemon juice. Brown bacon in a pan. Pour bacon and drippings over spinach, followed by yogurt mixture, and the remaining ingredients. Toss and eat!
