I hope you have some relaxation in store for you today. We definitely started off on the right note with some homemade crepes. They have been on my mind since reading the article in the new Martha Stewart Living. However, something about her recipe seems a bit fussy. Also it seemed pretty heavy on the flour, so I went to find my french cookbook. Sure enough, I was able to locate a much more simple recipe that worked like a charm. Martha always has all of these rules that you MUST follow. This cookbook said that pretty much anything goes in the world of crepes. That's more my style.
So loosely, here is what I used to make my crepes:
In a bowl, put two HEAPING tablespoons of flour. Add to it, 1 tablespoon of sugar and a pinch of salt. Mix together and make a well in the center. Crack three eggs into the well and begin stirring to combine all the flour. Once combined, pour in 2/3 c lowfat milk (whatever milk you have will work, I had 1%) and stir. Then add in 3 Tablespoons melted butter while stirring. Check your consistancy; it should be that of fresh cream. If necessary add the last 1/3 c milk.
At this point you can either make now, or refrigerate overnight. The cookbook said waiting isn't necessary, but I find it easiest to make the batter the night before so it is ready first thing in the morning.
Heat a nonstick skillet on med-low and butter it once. The batter should sizzle when poured into the pan. Lift the pan off of the stove. Pour in 3 Tablespoons and swirl pan with your wrist to cover bottom of pan. Cook for one minute. Flip the crepe over and cook for another 15 seconds. Place on a plate and cover with a towel while you cook the rest.
Don't worry. The first one will be a failure. It is just the nature of crepes. I also recommend removing the pan from the heat between each crepe for a bit in order to keep the pan from getting too hot.
Once you make these you will wonder why they aren't a staple around you house. They are that easy.
We have no plans for the rest of the day except to relax and maybe do a bit of laundry. This is the best way to enjoy our weekends. David should be home from call any time now and hopefully we can spend some time together. Have a great day and hooray for long weekends!
