Pasta Carbonara has to rank up there as one of my all-time favorite foods. It generally has everything I love the most about food: pasta, bacon, and cheese. It also tastes great next to some steamed veggies. It also can be whipped up in about ten minutes or so, which is great for those nights when I just don't have time or energy for a long drawn out meal.
*Ingredients*
1 lb. pasta (I used spaghetti)
3 cloves garlic cut in half
1 T extra virgin olive oil
1/2 pkg bacon, cut into 1/2" pieces
2 eggs
1/4 c half-n-half (you could use cream or whole milk..we just always have half-n-half)
fresh cracked pepper

In a large pot bring water to a boil. Add salt and pasta. Cook until al dente, about 8-10 minutes. Drain.
While the water is boiling, heat olive oil in a pan over med heat. Add in bacon and garlic and cook until browned. In a small bowl whisk together eggs and cream. Add pasta to the bacon and cook for another 2 minutes. Remove pan from heat and pour in the egg mixture, parmesean, and plenty of pepper. Toss and serve.
